Easy Eclair Dessert
  • 2 - 3 individually wrapped packages graham crackers
  • 2 (3 ounce) packages instant vanilla pudding mix
  • 3 cups milk
  • 1 (8 ounce) container Cool Whip, thawed
  • chocolate frosting
Cover the bottom of a 9x13 dish or pan with a single layer of graham crackers. Cover the graham crackers with a layer of the pudding/cool whip mixture, and repeat until you have 5 layers (graham crackers, pudding, graham crackers, pudding, graham crackers). Heat the chocolate frosting (make sure all of the foil seal is removed) in the microwave for 30 - 60 seconds...just be careful, because after a minute, it will be very runny. Cover the top with chocolate frosting...as much or as little as you want.

This is really easy to half as well, just get one box of pudding and mix it as directed on the box, I think it will say to use 2 cups of milk. Then just use an 8x8 dish or pan.

Let it sit in the fridge for about an hour or so before serving so the graham crackers can soften up a little bit.

Asian Meatballs With Sesame Lime Dipping Sauce


Servings: Makes 4 (main course) servings.

Meatballs:
1/4 cup fine dry bread crumbs (I used Panko)
1-1/2 pounds ground turkey (If you use breast meat, it will be more dry.)
1 large egg, lightly beaten
1/2 cup canned sliced water chestnuts, rinsed, drained, and finely chopped
1 Tablespoon finely minced ginger root
1 clove garlic, minced
1/4 cup chopped fresh cilantro
1 tablespoon soy sauce
2 teaspoons sesame oil

Dipping Sauce:
4 Tbsp soy sauce
2 tsp sesame oil
2 tbsp fresh squeezed lime juice
2 tbsp water

Accompaniment: white rice

Put oven rack in middle position and preheat oven to 500°F.
Start cooking your rice...I make 3/4 cup for this recipe.

Mix all ingredients with your hands until combined well. Shape meatballs by 1/4 cup and transfer to 13"x9" GREASED glass baking dish. Arrange meatballs about 1/2 inch apart in baking dish. Bake until cooked through, about 15 minutes.

Meanwhile, stir together dipping sauce ingredients in a bowl.

Make a bed of rice and place meatballs on top. Stir sauce, then drizzle meatballs with about a tablespoon sauce.
